How to Make (and Freeze) the Perfect Breakfast Burrito
National Burrito Day (on April 2) might be a made-up holiday, but I’m happy to use any excuse to enjoy a cheesy burrito. While I’d never turn down a classic bean and cheese burrito, my favorite is a breakfast burrito loaded with scrambled eggs, vegetables, and cheese.
Breakfast burritos are a go-to item in my house. They’re a great way to start the day, whether you’re enjoying them on a relaxing weekend or grabbing a burrito from the freezer during your weekday-morning rush.
They’re also a fuss-free meal, making them ideal for involving kids in the kitchen. Depending on the age of your kids, they can help with cracking eggs, chopping veggies, or adding ingredients to the burritos. They even make a good afternoon snack for endless teenage appetites.
If you’re feeding a group, or family members with strong preferences, a breakfast burrito bar offers plenty of flexibility. It’s fun to have a variety of toppings and let people mix and match ingredients to create their own masterpiece—and it gives kids some freedom and autonomy for making a healthy and nutritious meal on their own. Encourage your kids to be creative with combining different ingredients. Make it an experiment to see how the flavors work together and to determine which one they like best.
Here are some breakfast burrito filling ideas:
- Sautéed bell peppers and onions, chopped chipotle peppers in adobo sauce, crushed corn chips, and Mexican-style shredded cheese.
- Diced Italian sausage, sautéed bell peppers and onions, and Italian-style shredded cheese.
- Spinach, sautéed mushrooms, and mozzarella shredded cheese.
- Diced crispy-cooked bacon and sharp cheddar shredded cheese.

How to Freeze Breakfast Burritos
If you love breakfast burritos as much as I do, making time to meal prep a stockpile for the freezer can be a lifesaver on busy mornings.
Two simple—yet crucial—tricks ensure these burritos reheat well in the microwave or toaster oven. With these, you can feel good about your family starting their day with a breakfast that is full of protein and other nutrients to keep them full through the morning and energized for the day ahead.
The biggest thing to keep in mind for freezing burritos is that you want to avoid moisture and excess liquid as much as possible. A soggy burrito is always a disappointment, but that’s easily avoided by following these two simple tips:
1. Add flavor and spice without extra liquid.
I love salsa with my scrambled eggs, but the extra liquid will turn a frozen breakfast burrito into a soggy mess. Consider adding red pepper flakes, or my personal favorite, some chopped chipotle peppers in adobo sauce. If using watery vegetables like peppers and onions, sauté or lightly microwave them and drain on paper towels first.
2. Allow ingredients to cool before assembling frozen burritos.
If you make the burritos with hot ingredients, the steam will result in a sad, soggy burrito when you reheat it.
